Production of coconut flakes

Coconut flakes: contents and nutritional value

Water accounts for around half of a young coconut. When the flesh is still fresh, it contains around 36 percent fat, four percent protein, nine percent fibre and roughly five percent sugar. The high nutritional value, amount of easily digestible protein as well as the vitamins, minerals and trace elements make coconut flesh a valuable source of nutrition and energy. Among other minerals, it contains selenium, iron, potassium, calcium, iodine, magnesium, sodium, phosphorous as well as the vitamins B1, B2, B6, E and folic acid.

The fat content of coconut flakes is around 60 percent. Although these are saturated fatty acids, moderate consumption of coconut products and coconut oil is still considered beneficial to health. The medium-chain fatty acids and high content of lauric acid are especially advantageous.

Shelf life and storage of coconut flakes

Like all dried products, coconut flakes should be stored in a cool, dry place with as much protection from light as possible. Sealed in an airtight container and stored correctly, coconut flakes can often be kept for several years. However, the plant fats can spoil over time. In coconut flakes, this generally manifests itself in a strong, slightly musty odour. The fresh product only exudes a subtle coconut fragrance. If the packaging is not properly sealed, the coconut flakes will gradually lose much of their flavour. After opening the packaging, it is a good idea to store the coconut flakes in the refrigerator. When sealed, coconut flakes can be stored at room temperature.
